March 2015 - May 2015 Campus Kitchen is a student-powered food diversion project that repackages campus dining food to fight hunger in the community. I was very fortunate to be one of the student volunteers who ran Campus Kitchen when it first launched. Every Friday, 2 other students and I would pick up excess food from the dining hall. We then utilized the donated kitchen space to repackage, label, and weigh the food. Details of each food item like name, weight, and preparation date were recorded. All the food was then delivered to hunger relief organizations in Southwest Virginia. This volunteer experience not only provided me the opportunity to be involved in food diversion but also increased my awareness of the extent of food insecurity in the community.
