I volunteered to help Sarah Burkett, a Virginia Cooperative Extension agent, carry out the Living Well with Less workshop and Cooking Matters Supermarket Tour. Our target population was low-income families and individuals living in Southwest Virginia.
The Living Well With Less Workshop was hosted every Monday for 4 weeks. I helped to cook simple and nutritious meals for more than 15 participants. During mealtime, I would distribute recipes and communicate with participants regarding any nutrition-related questions they had.
The Cooking Matters Supermarket Tour was designed to provide individuals a hands-on learning experience on how to plan and purchase healthy foods on a limited budget. We set up a taste test for 15 participants to compare the fat content, price, and taste of various items. During the tour, Ms. Burkett gave me the opportunity to teach others how to read food labels, make healthy choices, and identify whole grains. We also talked about comparing unit prices and gave some tips on healthy cooking.
